Yield: 1-15″ thin crust pizza
- 16 grams instant yeast
- 1/2 teaspoon sugar
- 3/4 cups (350 grams) water
- 1 3/4 cups (500 grams) all purpose flour
- 1/2 tablespoon (17 grams) salt
Combine four, yeast, sugar and salt. Add water, stir to combine, then knead for 2 minutes with a stand mixer.
Lightly flour your work surface. Knead dough a few times until it loses its stickiness, then working from the edges towards the centre, stretch the dough out to create a 15″ circle.
Place dough on a lightly greased pizza pan and stretch to the edges of the pan.
Spread pizza sauce over the dough and top with cheese and other toppings.
Bake at 500 degrees for 9-10 minutes on lower rack, or until the underside is lightly browned. Switch oven to broil and bake for another 1-2 minutes until cheese is golden brown and bubbly.
