
Place in a large bowl and mix well:
- 2 cups flour
- 1 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tablespoon cinnamon
- 1/2 tsp salt
Add
- 2 carrots, shredded (2 1/2 cups)
- 2 apples, shredded (2 cups)
- 1/2 cup dried cranberries
- 1/2 cup nuts
- 1/2 cup coconut
In a separate bowl, whisk together and add to the four mixture
- 3 eggs, well beaten
- 3/4 cup vegetable oil
Spray muffin tins and bake at 350 for 20-25 minutes.
