Traditional Rice Pudding

  • 2 eggs
  • 1 tablespoon vanilla
  • 1 teaspoon cinnamon
  • 1 1/2 cups long grain rice
  • 4 cups water
  • 6 cups milk
  • 1 cup sugar

Whisk eggs into a small bowl, then add vanilla and cinnamon. Set aside.

Wash rice well, then cook over medium heatm heat with 4 cups of water, stirring often, until most of the water is absorbed, 5-10 minutes.

Heat milk in the microwave until lukewarm, then add to the rice mixture and cook over medium heat until most of the liquid is absorbed, about 20-25 minutes.

Add sugar, and continue to cook, stirring constantly, about 8-10 minutes.

Add egg slowly to rice mixture, stopping frequently to stir it completely into the rice.

Pour pudding into a clean dish and refrigerate for 15-30 minutes.
