Rhubarb Pudding Cake

Preheat oven to 350

Grease an 8×8 inch pan, Cut enough rhubarb to make 3 cups, then spread in an even layer at the bottom of the pan.

In a small bowl, mix together:

  • 1/2 cup melted butter
  • 1/2 cup milk
  • 1/2 teaspoon vanilla

In a larger bowl, mix together

  • 1 cup flour
  • 2/3 cups white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Stir the butter mixture into the flour mixture, then spread on top of the rhubarb

In a bowl, mix together

  • 1 cup icing sugar
  • 1 tablespoon corn starch

Sprinkle sugar mixture over the rhubarb, then pour over everything

  • ! cup cold water
