Ranger Cookies

A delicious cookie studded with dried fruit, coconut and heart healthy oats.

Oven: 375 Fahrenheit
Yield: 30 cookies

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1 teaspoon vanilla
  • 11/4 cup all purpose flour
  • 1 cup quick oats, or blitz regular rolled oat 5-10 seconds in a blender
  • 1 cup coconut
  • 1 cup raisins, cranberries or other dried fruit

In a large bowl, beat butter on for 30 seconds on high, then add granulated sugar, brown sugar, baking powder and baking soda.

Beat in egg and vanilla until combined, then stir in flour, rolled oats, coconut and raisins.

Drop by rounded teaspoons 2 inches apart on an ungreased cookie sheet, and bake at 375 for 8 minutes.

Leave on cookie sheet for 1 minute, then transfer to a wire rack and allow to cool.
