When life feels complicated, why not just take a break and bake yourself a nice, uncomplicated Snickerdoodle cake? There’s no fancy ingredients, you can whip it up in 5 minutes and it’s sweet, simple and delicious. Perfect for whatever ails you.

- 1/2 cup (115 grams) of softened butter
- 1 cup (200 grams) brown sugar
- 2 eggs
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon vanilla extract
- 1 teaspoon of grated citrus zest (optional)
- ½ cup buttermilk, sour cream, yogourt or sour milk*
- 11/2 cups flour
Topping - 1 1/2 tablespoons brown sugar
- 1 teaspoon cinnamon
Preheat oven to 350 degrees
*If you don’t have buttermilk etc., make sour milk by adding 1 tablespoon of lemon juice or vinegar to the milk, and let sit for 10 minutes
Cream together butter and sugar.
Add eggs, one at a time, beating well, then add cinnamon, baking powder, salt, baking soda and vanilla extract and grated citrus zest, if using.
Once that is smooth, add the buttermilk (or sour cream, yogurt or sour milk) and flour, beating until smooth.
Pour into a buttered loaf pan.
For the topping, mix together the brown sugar and cinnamon in a bowl, then sprinkle the mixture on top of the cake.
Bake for 40 to 50 minutes, until the top springs back when lightly pressed. Let it cool in the pan completely before starting to slice off slivers until the thing is gone.
